Hot Sauce Blog - The HSB is a one stop location for reviews, news, recipes & anything else related to hot sauce and spicy foods.

HotSauceBlog.com is managed and run by me, Nick Lindauer. I’m also the creator & owner of Sweat ‘N Spice Hot Sauces. HotSauceBlog.com is used for the sole purpose of communicating hot sauce related news, reviews & events to the chileheads community. Plus, it’s fun!

My passion is hot sauce - plain and simple. Those who know me know full well that I put everything I have into all things hot sauce.

What makes me the authority on hot sauce? Nothing. I’m not. Dave Dewitt is the “Pope of Peppers”, maybe that makes me the “Sultan of Sauce” - All I know is that I sleep, eat and breathe hot sauce.

The Mole Page - The word "Mole" comes from the Aztec word "Molli," meaning "concoction," "stew" or "sauce." To the unenlightened, Mole is a Mexican chocolate sauce. In Mexico, Mole is a hundred dishes in a hundred homes. It varies from town to town and family to family. The most famous Mole, "Mole Poblano de Guajolote" (made with Wild Turkey--the bird, not the booze) is a special complex dish carefully woven together using dried chiles, nuts, seeds, vegetables, spices and chocolate (preferably ground, toasted cacao beans, but Mexican chocolate, such as Ibarra brand, is acceptable).

Some refer to Mole Poblano as the National dish of Mexico. But there are many, many Moles, including Green Mole with Tomatillos, Green Mole with Pumpkinseeds, Orange-Red Mole, Red Mole, Yellow Mole and the famous peasant Soup, Mole de Olla. To some, Mole is a sauce poured on enchiladas and heated up in a microwave. To others, Mole is a Turkey (or Chicken) stew. To me, Mole is my expression of passion for cooking, especially cooking with chiles. It is a tribute to 17th century tradition while it allows me to create a new dish every time I make it.

SauceAuthority.comSauceAuthority.com launched in the summer of 2012 and we have already exceeded expectations! Our BBQ and hot sauce fans have turned out in droves to find everything you need for reviews, recipes, featured articles and a little bit of humor on all-things sauce!

Myself and two friends began the site because we were all avid hot sauce and BBQ sauce fans and figured, heck, why not make it a priority in our lives to spread on the word on the ton of great sauces that are available out there. We aren’t the end-all, be-all of hot and BBQ sauces, but I do know that we know a thing or two about a thing or two when it comes to them – mark my word! It was time for the three of us to make sure that not only the “famous” sauces be recognized, but more importantly the sauces that are so damn good but don’t have the following that many of the brand-names have.

That’s where SauceAuthority.com has made its biggest mark by highlighting the sauces by the mom-and-pop stands, giving everyone our thoughts, and then getting the word out to the masses about the many different and unique sauces that are available.

We love sauce, and this is the perfect avenue to not only help everyone pick their top choice, but also make hot sauce and BBQ sauce a priority in people’s lives on a daily basis! Some say we are insane for doing this, but this has been the best journey all three of us have ever been on. Check it, I have a strong suspicion you’ll feel the same!

Frank's RedHot Buffalo Chicken Wings

Ingredients:
2 1/2 lbs. chicken wing pieces
3/4 cup Frank's® REDHOT® Buffalo Wing Sauce

Directions:
1. Bake wings in foil-lined pan at 500°F on lowest oven rack for 20 to 25 minutes until crispy, turning once.
2. Toss wings in Buffalo Wing Sauce.

Tip: You may substitute 1/2 cup FRANK'S® REDHOT® Sauce mixed with 1/3 cup melted butter for the Buffalo Wing Sauce.

*Alternate Cooking Directions:
Deep-fry at 375°F for 10 minutes.
Broil 6-inches from heat 15 to 20 minutes, turning once.
Grill over medium heat 20 to 25 minutes, turning often.*
