Homemade Cream of Vegetable Soup

MAC Casserole



Hash Brown Casserole

1 package of frozen Hash Browns O'Brian (it has peppers and onions in the hash browns)
1 can of mushroom soup(un-diluted)
2 tablespoons melted butter
grated cheese - any kind - any amount (I use about half a cup)

Using hash browns from the freezer (don't thaw) stir in soup, butter, cheese, put in greased dish bake one hour at 325º. It will be brown on top and bubbly.

This is fast and easy, I use this for lunch the next day with a salad.

If you cannot find the frozen O'Brian hash browns - plain hash browns will do.

This is also good on the plate with a tablespoon of your favorite salsa on top (DO NOT COOK SALSA IN WITH CASSEROLE).

We had this casserole with some New York Strip steaks we got on sale and some grilled shrimp. This casserole is really good. My wife tweaked it up a notch with some sour cream when we served it. Also, choppin up some onions and cookin them in the casserole gives it that little something extra. We also had salad, garlic bread and topped it off with pecan praline ice cream and strawberry cheesecake ice cream for dessert. Great dish miz wiley and thanks for sharing...doc


Homemade Cream of Vegetable Soup

1 can of cream of mushroom soup (undiluted)
1 can of cream of chicken soup (undiluted)
2 cups mixed vegetables (any sort that you prefer, I use frozen when in a hurry)
2 tablespoons of butter
1 cup of whole milk (more if you prefer to have the soup thin rather than thick)
cheese
seasoned croutons

Stir soups, milk, & butter until melted over heat, stir in veggies and cook for about 15 minutes on low heat add cheese of any kind stir until melted, top with croutons.

This is really good for lunch the following day.

As a quick soup I use frozen vegetables thawed in the microwave.

Macaroni and Mater Soup

In a pot on the stove combine and cook for about 5 minutes:
1 can chopped tomatoes (do not drain)
1 can tomato soup - undiluted
1/2 cup milk
1/2 cup cooked macaroni
1/2 pkg. of chuckwagon corn (frozen corn with red, green peppers and onion in it)
1/2 stick margarine
1/4 bar of pepper jack cheese

Combine all of this and bring to a simmer on top of the stove stir often,(this way all ingredients get very hot) then pour into a crock pot. This is good and filling!

We ate it with yeast rolls. The cheese adds a lot of flavor. You can also add salsa as a topping in the bowl.


MAC Casserole

I made a really good mac casserole the other day;

Cooked Macaroni
Shredded Cheese (any kind...I used about 1 cup Chedder and a little Pepper Jack for taste)
1 can Cream of Mushroom Soup (un-diluted)
1 half cup Sour Cream
1 half stick of melted Margarine
Salt
Pepper
Bread Crumbs for topping

Stir soup straight out of can (do not add milk) with sour cream, cheese, melted butter, salt, pepper, and then add the cooked macaroni. Put in greased baking dish and add bread crumbs as a topping.

Bake 30 minutes at 325°.

This is really good and is a one dish meal. I added a salad with ours and supper was ready!
