Corn Casserole
Easy and Often Requested Cranberry Relish
Grand Marnier Cranberries
Maytag Blue Cheeseburgers
Pumpkin Chiffon Pie



Corn Casserole

3 beaten eggs
2 16 oz pkgs frzn white corn thawed (definitely not canned)
1 cup shredded Jack cheese
1 cup shredded pepper jack cheese
1 2 oz jar pimentos drained (to make the kids wonder what I'm serving them!)

Combine ingredients in large bowl. Bake uncovered at 350 for 35-40 minutes or until bubbly.
(I won't be adding the pepperjack myself, since two of our kids don't like any sort of heat (alas – sniff), so I'll just be using 2 cups Jack.)


Easy and Often Requested Cranberry Relish

2 lbs cranberries
4 cored apples
4 peeled orages
4 cups sugar

Food process the first 3 ingredients. Stir in the sugar. Tastes best after sitting in the fridge for a day.

Grand Marnier Cranberries

1 c. sugar
1 c. water
1 16 oz bag fresh cranberries
1 cup chopped apple
1 cup chopped walnuts
½ cup raisins
juice from ½ orange
juice from ½ lemon
¼ cup Grand Marnier

Combine sugar and water in a large saucepan and bring to a boil. Ad the cranberries and return to a boil, the lower the heat so that the liquid simmers. Add the remaining ingredients and simmer for 10 – 15 minutes.

At this point the recipe says you can add 1 teaspoon each of ground cinnamon and freshly grated nutmeg. (Frankly the thought of spiced cranberries doesn't sit with me right so our cranberries will merely be drunk!)

Then let the sauce cool


Maytag Blue Cheeseburgers

Ingredients:
1.5 lb fresh ground Lean sirloin burger
1 small sweet onion (vidalia, red, etc.)
1/4 tsp garlic powder
1/4 tsp cayenne powder and a scant pinch of habanero power if wanted.
pinch of salt (blue cheese will add enough of it's own here.)
A few twists of your favorite pepper.
1 cup crumbled Blue Cheese

Directions:
Place ground beef in a good mixing bowl.
Dice onion finely and add to ground beef.
Add a dash of garlic powder to beef.

Mix beef mixture with your hands until well mixed and smooth.

Form your patties and place on a piece of wax paper on a baking sheet.

Add garlic powder, cayenne pepper, habanero pepper salt and pepper into a mortar. (You can substitute blackening seasoning if you like).

Grind thoroughly to a fine powder rub with your pestle.

Smooth a pinch or two of the rub to the tops of your burgers and lightly press into the surface.

Cook your burgers on a medium, medium hot grill to taste.

Just before they're done, add a couple of teaspoons of the crumbled bluecheese to the top of each burger.

Close the grill and let the cheese melt.

Get a bottle or two of your favorite beer.
Put a little blues on the CD.
Get some friends over.
Enjoy.


Pumpkin Chiffon Pie

Crust

1 3 1/2 oz can flaked coconut
1/4 cup crushed graham cracker crumbs
1/3 c. melted butter or margarine
2 T. sugar

Preheat oven to 375. spread coconut on cookie sheet and bake 8-10 minutes until lightly browned. Mix toasted coconut, graham cracker crumbs, butter and sugar together and press firmly into the botton and sides of 9" pie plate. Bake crust for 6-8 minutes until golden. Cool.

Filling

1 envelope unflavored gelatin
3/4 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup sugar
3 eggs, separated
1/2 cup milk
1 1/4 cup canned pumpkin
1/4 cup sugar

In double boiler, mix gelatin, cinnamon, ginger, nutmeg, salt and sugar.

In small bowl whisk egg yolk and milk well and stir into gelatin mixture. Then stir in the pumbkin. Cook over boiling water 20 minutes until thickened, stirring frequently. Referigerate the mixture until cool, but not set.

In large bowl beat eggs whites into soft peaks with mixer at high speed. Gradually add 1/4 cup sugar into egg whites at high speed. Gently fold pumpkin mixture into whites. Pour into crust and refrigerate until set.

Have a grand holiday.

I plan on rolling from the table to a nap. Then I'll repeat the process in a few hours.
